Today I'm going to tell you why and for what reason Medusha company, the inventor of the technology and the manufacturer of jars made from natural beeswax, opted for acacia honey. It has been known since ancient times and established as an exquisite delicacy used as a gift for the upper classes and the royal court.
Acacia honey is the lightest, most fragrant and nutritious of the existing ones, and the indisputable advantage of this variety is the ratio of carbohydrates with a low glucose content (up to 35%) and a large amount of fructose (more than 40%), as a result, it remains liquid for a long time and practically does not crystallize out. Therefore it can be stored for a long time in its original natural consistency. Medusha harvests exclusively premium honey, namely so-called "white honey" or "virgin's honey" (mel album s. virgineum), flowing naturally from the honeycomb.
There are two types of nectar-bearing acacia, white and yellow one. White acacia (Robinia pseudoacacia) honey, that has a pretty much transparent white color, becomes snow-white when pasteurized, unlike yellow acacia honey that originally has a slightly greenish tint turning into amber after pasteurization. In terms of taste and healthy qualities, these two sorts have minor differences, but honey gourmets believe that white acacia has a more refined taste, with a hint of vanilla and long aftertaste. Also, pure acacia honey has no bitterness, as, for example, in buckwheat or chestnut nectar.
The flowering time of the white acacia (Robinia pseudoacacia) falls in late May to early June. Under favourable weather conditions, bees are able to harvest up to 8 kg of nectar from one tree, and from a hectare of acacia about a hundredweight and more. Harvesting times are limited as acacia blooms for only about two weeks offering nectar within only one. Weather conditions are able to significantly affect the harvest, as in the current 2020, when the harvest of acacia honey decreased 10 times compared to 2019 due to a rainy spring. Here is the reason why its value has noticeably grown.
