Additional Information: This hotel is owned and operated by an independent franchisee, VCA Hospitality Management, LLC. The franchisee is a separate company and a separate employer from Marriott International, Inc. The Food and Beverage Manager oversees daily operations within the Food and Beverage department, ensuring compliance with all brand policies, standards, and procedures. This role is responsible for customer satisfaction, operational quality, and adherence to legal obligations while managing the operating budget. Additionally, the manager ensures compliance with HACCP principles and Marriott's food safety standards. The position involves strategic planning, team leadership, and fostering a collaborative environment focused on service excellence.
Education and Experience
• 2-year degree from an accredited university in Food Service Management, Hotel and Restaurant Management, Hospitality, Business Administration, or related major; 3 years of experience in food and beverage, culinary, or related professional area.
Core Responsibilities
Managing Day-to-Day Operations
• Supervise daily operations of the Food and Beverage department, ensuring compliance with brand policies and standards.
• Ensure compliance with HACCP principles and Marriott's food safety standards in all operational areas.
• Oversee and manage the purchase of supplies, cleaning materials, and uniforms.
• Maintain adequate staffing levels to meet operational needs, guest satisfaction, and financial objectives.
• Operate and oversee the maintenance of department equipment, reporting any technical issues.
• Implement an effective monthly self-inspection program to ensure operational quality and food safety.
• Manage and control the operating budget, ensuring compliance with legal obligations.
• Coordinate and supervise cleaning programs in all Food and Beverage areas.
Food Safety Compliance
• Monitor and ensure that all food handling, storage, and preparation processes comply with HACCP principles.
• Implement quality and safety controls to minimize risks and ensure the well-being of guests and employees.
• Train staff on Marriott's food safety standards and ensure daily compliance.
• Conduct regular inspections to evaluate compliance with local regulations and internal brand standards.
Team Leadership and Management
• Develop and communicate clear objectives to prioritize and organize the team's work.
• Manage and/or review schedules for all associates in the Food and Beverage department to ensure efficient operational coverage and address business needs.
• Promote a workplace culture that encourages motivation, empowerment, and teamwork.
• Provide guidance, feedback, and individual coaching to employees to improve performance.
• Oversee the performance evaluation process for hourly employees and managers.
• Hire, train, and develop staff to meet business needs.
• Ensure fair and equitable treatment of all employees, promoting retention and satisfaction.
Delivering Exceptional Customer Service
• Monitor service quality daily, ensuring that customer expectations are met and exceeded.
• Provide services that go above and beyond to enhance guest satisfaction and retention.
• Proactively address guest concerns and foster positive guest relationships.
• Review guest satisfaction reports and share improvement opportunities with the team.
Human Resource Activities
• Set performance standards and monitor team performance.
• Identify developmental needs of team members and provide mentorship or coaching to
enhance skills and knowledge.
• Ensure that disciplinary procedures and documentation are completed according to local and standard operating procedures.
• Manage and/or review schedules for all department associates, ensuring fairness and alignment with operational needs.
Additional Responsibilities
• Analyze information and evaluate results to determine the best solutions and resolve problems.
• Understand and manage budgets, financial reports, and payroll progress reports.
• Act as a role model by demonstrating professionalism and fostering a positive work environment.
• Perform other duties as assigned to meet business needs.
