JOB SUMMARY
The F&B Cost Controller is responsible for managing and analyzing the food and beverage costs within an organization. This role involves ensuring that all F&B operations are efficient and cost-effective, while maintaining quality standards and maximizing profitability.
CANDIDATE PROFILE
Education and Experience
• 4-year bachelor's degree in Finance and Accounting or related major; no work experience required.
CORE WORK ACTIVITIES
Cost Analysis
• Monitor and analyze food and beverage costs, including purchasing, inventory, and wastage. Prepare regular reports on cost trends and variances.
Inventory Management
• Oversee inventory control processes, including stock counts and ordering procedures. Ensure accurate tracking of inventory levels and minimize stock discrepancies.
Supplier Relations
• Work closely with suppliers to negotiate pricing and terms. Maintain strong relationships to ensure quality products and services.
Menu Engineering
• Collaborate with chefs and management to analyze menu pricing and profitability. Recommend adjustments based on cost analysis.
Training
• Train and educate staff on cost control practices, including portion control and waste reduction techniques.
Reporting
• Prepare financial reports for management that include profitability analysis, cost breakdowns, and operational performance metrics.
Compliance
• Ensure compliance with company policies and procedures, as well as local health and safety regulations.
