JOB SUMMARY
Seeking an experienced Chef de Cuisine accountable for the quality, consistency, and authentic production of the restaurant kitchen, specializing in Italian cuisine. The role requires exhibiting exceptional culinary talents, particularly in Italian cooking, by personally performing tasks, leading the staff, and managing all food-related functions. Responsibilities include coordinating Italian-inspired menus, purchasing authentic ingredients, staffing, and ensuring food preparation meets the highest standards. The ideal candidate will improve guest and employee satisfaction while maintaining the operating budget and ensuring compliance with sanitation and food safety standards. A key responsibility is developing and training the team to ensure consistently excellent results.
CANDIDATE PROFILE
Education and Experience
- Degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or a related major;
AND - Required Experience: 5-10 years of hands-on experience in preparing and creating Italian cuisine, preferably in 5-star or luxury resorts.
CORE WORK ACTIVITIES Ensuring Culinary Standards and Responsibilities are Met - Develops, designs, and creates menus that celebrate traditional and modern Italian cuisine.
- Supervises kitchen operations and ensures compliance with all food and beverage standards and procedures.
- Recognizes superior quality ingredients, presentations, and flavors.
- Plans and manages food quantities, recipes, and plating requirements for authentic dishes.
- Prepares and cooks specialties regularly and for special events.
- Ensures compliance with food safety laws, proper handling, and correct storage standards.
- Develops daily and seasonal menu items aligned with culinary traditions.
Leading the Kitchen Team - Supervises and coordinates activities of cooks and workers in the kitchen.
- Leads shifts while preparing dishes and ensuring specifications are met.
- Trains the team on cooking techniques and plating standards.
- Builds mutual trust and collaboration among team members, serving as a role model.
- Ensures productivity, cross-training, and employee understanding of expectations.
Establishing and Maintaining Kitchen Goals - Sets performance, budget, and team goals focused on culinary excellence.
- Monitors kitchen operations to align with financial objectives.
- Implements and enforces company safety standards.
Ensuring Exceptional Customer Service - Provides authentic Italian dining experiences that exceed guest expectations.
- Engages with guests to gather feedback on dishes and ensure satisfaction.
- Empowers employees to deliver memorable dining experiences.
Managing and Conducting Human Resource Activities - Identifies developmental needs and provides training on cooking methods.
- Participates in performance appraisals and employee mentoring.
- Assists in recruiting team members skilled in cuisine.
Additional Responsibilities - Communicates effectively with supervisors, coworkers, and subordinates.
- Solves problems and makes informed decisions for the kitchen's operations.
- Attends and contributes to relevant meetings.
