Bringing a wealth of culinary knowledge and management experience.
(El Paso, TX) August 25, 2021 Hotel Paso Del Norte, Autograph Collection is thrilled to announce the appointment of Chef Jason Brumfiel as Executive Chef. Chef Jason brings with him a wealth of culinary knowledge and management experience, having worked under many influential chefs and in such positions as Executive Chef and Chef de Cuisine at numerous restaurants across the country. He also has experience cooking for presidents, pro-athletes, actors, and even a queen.
Before joining Hotel Paso Del Norte, he was Executive Chef at The Boathouse Restaurant, an upscale dining experience in Florida where he was responsible for all food preparation and management of staff.
Chef Jason will be overseeing all of the dining located at the hotel, which includes 1700 Steakhouse, a fine-dining experience with West Texas flare; The Dome Bar, offering light bites and cocktails situated under a Tiffany-style, stained-glass dome; Sabor, a Southwest-inspired restaurant; El Mirador, a rooftop bar featuring small bites and cocktails; and Dulce, a bakery cafe featuring freshly baked goods and house-made gelato.
Brumfiel's culinary roots started in Indiana where his dad was in the mom-and-pop restaurant industry, but it was in New Orleans where he fell in love with food. He was drawn to the southern food and the rich culture that New Orleans had to offer. He started his career washing dishes and continued to work his way up the culinary ladder.
Cooking in the United Kingdom expanded Chef Jason's perception of food. He found that dishes he was used to making in America weren't as popular amongst Europeans and vice versa. This led to his deep understanding to look to the local cuisine for inspiration. When speaking about learning from locals, Chef Jason mentions, "You realize that every state tends to have some treasures that you werent aware of."
In continuation of his appreciation for local cuisine, he plans to incorporate local influences to the menu at Sabor; such as including a new pozole dish. Chef Jason plans on having a pozole cookoff amongst the hotel's culinary team members where the winning dish will be added to the menu. He also plans to purchase ingredients from local farmers and ranchers such as Eagle Mountain Farmhouse Cheese located in Lipan, Texas outside of Dallas.
In addition to new menu items, Chef Jason has many exciting plans in the works such as opening a rooftop garden, a chef's table for patrons, and developing the outdoor patio area.
Chef Jason has had his eyes on Texas for the past 10 years looking to move to cities such as Fort Worth and Austin, but it was El Paso that sealed the deal. When asked about his thoughts on El Paso, Chef Jason mentioned that it was the people that really sold him. He said that he has felt so welcomed and voiced his excitement to work with Chef Mike at 1700 Steakhouse whose enthusiasm makes him young again and challenges him to be a little more and a little better.
Chef Jason is bringing his family to El Paso including his wife and four children, two of whom will be headed to College in September. The other two will be entering 10th and 11th grades. When he is not in a restaurant cooking, Chef enjoys hiking with his family, ice skating with his daughters, and creating things in the kitchen at home.
Come get to know Chef Jason Brumfiel on August 25th when he will be cooking for the Downtown Management District Food Tour from 6 9 p.m. He will be preparing fried pork belly chicharrn over sweet corn grits served with habanero peach barbeque sauce. Tickets to the event are sold out but this dish will be open to the public to try for a price of $8.
