Situated in Dubais largest experience resort - JA The Resort, Ellora by Vikas Khanna is described as'a seasonal culinary experience inspired by the traditional flavours of India'and the Diwali menu is a showcase of some of the most fondly familiar Diwali dishes, crafted with the signature style of Vikas Khanna's explorative and experiential cuisine. For 165AED per person, the Diwali experience will include a beautifully decorated venue of candlelight and rangoli's and four delicious courses in the warm ambiance of Ellora. The menu includes all the classic Diwali snacks and sweets from Namak Pare flour crisps to Barfi with nuts and Gulab ka Sharbat a fragrant combination of rose petals, milk, and almond flakes.
Starters include a choice of Tandoori Paneer Tikka crafted with cottage cheese, green mango reduction with a basil-chili infusion or Tandoori Coconut Prawns with a coconut crust, passionfruit sauce and pink radish. Main courses include Vegetable Jalfrezi with seasonal vegetables, roasted tomatoes, and potato crisps or Pista Murgh- succulent Chicken breast served with pistachio gravy and pickled onions, both served with generous sides of chickpea masala, steamed rice, boondi raita and Elloras signature roti. The final course of dessert features a delicious Badam Ki Phirni - Almond pudding with flavours of saffron and cardamom and fresh berries and Baked Gulab Jamun traditional milk dumplings with rose petals and cardamom sauce.
'Ellora', meaning caves in Sanskrit, was named by Khanna himself to represent a beacon of positivity and light that shines through darkness. Symbolising the creativity that may be borne of challenging times, the name reflects Khanna's optimism and commitment in opening a new venture despite the current circumstances. As a lively, modern exploration of traditional Indian cuisine, Ellora by Vikas Khanna is an affordable and approachable homage to regional Indian kitchens, inspired by the raw beauty of home cooking, from the richly diverse regions of India and South Asia.
