Main Duties
Customer Service
• Ensures the delivery of brand promise and provides exceptional guest service at all times.
• Provides excellent service to internal customers in other departments as appropriate.
• Handles all guest and internal customer complaints and inquiries in a courteous and efficient manner, following through to make sure problems are resolved satisfactorily.
• Maintains positive guest and colleague interactions with good working relationships.
Financial
• Assists to improve productivity levels and the need to prudently manage utility/payroll costs within acceptable guidelines.
• Assists in the inventory management and ongoing maintenance of hotel operating equipment and other assets.
• Ensures new technology and equipment are embraced, improving productivity whilst taking work out of the system
• Assists to ensure that breakages are administered so as to provide constant feedback to the operation as a tool to reduce breakages and losses.
Operational
• Ensures that minimum brand standards have been implemented.
• Responds to the results of the Consumer Audit and ensures that the relevant changes are implemented.
• Works closely with other Food and Beverage Managers & Head Chef in a supportive and flexible manner, focusing on the overall success of the hotel and the satisfaction of hotel guests.
• Ensures all Food and Beverage equipment and other facilities in the Outlet kitchen are maintained according to the Departmental Operations Manual requirements.
• Constantly strives to satisfy the needs of the Outlet by providing the necessary operating equipment.
• Strictly adheres to the par stocks for all operating equipment, supplies, inventoried items, and to ensure that the outlet is adequately equipped.
• Maintains the cleanliness of the Outlet kitchens and equipment.
Operational (continued)
• Assists to ensure that the back-of-house areas are kept clean and organised.
• Ensures garbage are disposed off properly and ensuring that paper towel dispensers and soap dispensers are filled daily.
• Reports any difficulty or problem to Head Chef and Food and Beverage Manager for solution or follow-up actions.
• Ensures proper handling of the automatic dishwashing machine that cleans and washes plates, cups, saucers, silverware, glasses and other dishes.
• Ensures tableware, chinaware, glassware, and silverware are washed and cleaned as per the established procedures.
• Conducts training to improve employees' knowledge and skills.
• Assists in conducting monthly inventory checks on all operating equipment and supplies.
• Handles and reports "Lost and Found" items according to the Hotel "Lost and Found" procedures.
• Assists to ensure that each outlet is supplied with clean and dry operating equipment.
• Assists to ensure that the food production areas are supplied with clean and dry kitchen utensils.
• Assists to supervise night cleaning contractors in kitchen and back-of-house food and beverage areas.
• Assists to ensure that back-of-house cleaning schedules and garbage runs are strictly adhered to and areas are cleaned according to established standards.
• Assists to prepare and issue repair and maintenance job orders to ensure the proper maintenance of the outlet.
Personnel
• Assist to ensure the punctuality and appearance of all Food and Beverage employees, making sure that they wear the correct uniform and maintain a high standard of personal appearance and hygiene, according to the hotel and department's grooming standards.
• Assist to maximise the effectiveness of employees by developing each of their skills and abilities through the appropriate training, coaching, and/or mentoring.
• Encourages employees to be creative and innovative, challenging and recognising them for their contribution to the success of the operation.
• Ensures that all employees have a complete understanding of and adhere to employee rules and regulations.
• Ensures that employees follow all hotel, company and local rules, policies and regulations relating to fire and hazard safety, and security.
• Assists to feedback the results of the Employee Opinion Survey and ensure that the relevant changes are implemented.
Other Duties
• Attends and contributes to all training sessions and meetings as required.
• Is knowledgeable in statutory legislation in employee and industrial relations.
• Exercises responsible behaviour at all times and positively representing the hotel team and Hyatt International.
• Maintains strong, professional relationship with the relevant representatives from competitor hotels, business partners and other organisations.
• Reads the hotel's Employee Handbook and have an understanding of and adhere to the hotel's rules and regulations and in particular, the policies and procedures relating to computer resources, fire, hygiene, health and safety.
• Ensures high standards of personal presentation and grooming.
• Responds to changes in the Food and Beverage function as dictated by the industry, company and hotel.
• Carries out any other reasonable duties and responsibilities as assigned.
