Description
1. Be responsible for the daily operation and management of the entire kitchen department, and plan to maintain and improve the service quality of all kitchen staff. Ensure stable and good customer service, healthy team development, and communication and coordination among internal and external departments.
2. Check the implementation and execution of management systems, job responsibility systems, and service standards within the jurisdiction.
3. Supervise the quality of products in specific departments and review them with quantitative standards, and keep track of the hotel's daily operation.
4. Chair regular business meetings or special business meetings of the kitchen department, coordinate and inspect business work.
5. Refer to the hotel's long-term plan and annual plan proposed by the general manager, and provide reasonable suggestions. Express opinions on the tourism market and hotel management policies, and provide reference information for the general manager.
6. Set work goals for each subordinate department, and implement them after approval by the general manager.
7. Supervise and inspect the raw material and cost control of subordinate departments.
8. Research and develop special menus based on seasonal differences and guest situations. Organize various meetings of the kitchen department and complete other tasks assigned by the hotel general manager. Regularly hold department staff meetings to review recent service situations.
9. Ensure that the kitchen's food safety meets the requirements and regulations of the market supervision department.
Qualifications
1. At least 1-2 years of working experience as a chef or executive sous chef in an international luxury brand hotel kitchen.
2. Candidates with independent catering operation experience are preferred.
3. Must have certain experience in banquets and à la carte services.
4. Familiarity with local cuisine and working experience in the Shanghai market is preferred.
5. Solid kitchen business knowledge and excellent cooking skills.
6. Efficient execution ability and the ability to train and lead a team.
7. Proactive, hardworking, with a strong sense of innovation and teamwork spirit.
