Description
We're looking for an individual who embodies the luxury lifestyle experience. This candidate will have a passion for exceptional hotel service and who can express that belief in an atmosphere of spontaneity and authenticity. The Culinary Supervisorhas basic skills in department training and is capable of assuming department responsibilities in the absence of Sous Chef/Executive Chef. Skills and knowledge to include culinary education, basic cost control understanding, basic communication, leadership skills and computer skills. May assist in monitoring payroll costs & overtime. Responsibilities include the supervising of hourly cooks.
• Assist and supervise hourly preparation and banquet cooks
• Monitor completion of opening temperature logs
• Open & closing kitchens (turn on equipment in the prep kitchen and dish area, floor mats, etc.)
• Communicate with fleeting sous chef MOD about any order and prep needs
• Execute breakfast/lunch banquets with assistance form Fleeting/Banquet managers and team as needed
• Assist cafeteria attendants with maintaining café space and preparing food for the cafeteria as needed
• Checking out prep staff - go through prep and closing/cleaning lists before leaving
• Make sure you and your staff are taking breaks daily as business allows
• Training of line level employees
• Assist chef team with menu development
• Communicate with Sous Chef MOD about any maintenance issues/put into HotSos as needed
• All other duties as assigned by leadership
