Job Description
The Fairmont Chateau Lake Louise is seeking a dynamic Restaurant Supervisor/Sommelier. This position is ideal for the individual who aspires to lead our front-of-house team across multiple outlets and serve as our in-house wine authority. You will ensure world-class service flows while working alongside our beverage director in curating and elevating our wine program (500+ labels) to enhance every guest's dining experience.
Pay Rate: $26.87Job Duties Include:- Display an active presence in our dining rooms and public areas interacting with guests and colleagues
- Execute proper wine service techniques (opening, decanting, serving at ideal temperatures, and correct glassware)
- Recommend food and wine pairings to guests; train and empower servers to make informed suggestions
- Foster ongoing professional development, growth, and satisfaction of all Food & Beverage colleagues-providing feedback, coaching, and formal training on service excellence and wine knowledge
- Cellar Management: Conduct daily inventory reconciliation of wine sales and place timely re-orders, continuously monitor cellar conditions (temperature, humidity, security), and perform monthly inventory audits of a 500+ label collection.
- Monitor resources ensuring the tools are available to deliver the service our guests expect
- Ensure the ongoing professional development, growth, and work satisfaction of all colleagues
- Ensure all financial reporting is maintained and accurate (billing, payroll etc.)
- Monitor and manage labour costs and expenses daily with a focus on meeting and improving on month end targets
- Ensuring that the outlet(s) maintain a first class and positive visual impact, including ambiance, cleanliness, orderliness, decor and service flows
- Set a positive example for Food & Beverage colleagues through exemplary dress, grooming and self-discipline in addition to monitoring colleague performance in these areas
- Inspect Food & Beverage uniforms, menu selection, cutlery, linen, china, and glassware & equipment/tools on a regular basis. To ensure they are clean, well maintained and consistent for each outlet
Qualifications
- Minimum of two years of Food and Beverage experience, in a fast-paced environment. Post-Secondary Degree in Hospitality or Food and Beverage Management is an asset
- Sommelier certification (e.g., Certified Court of Master Sommeliers, WSET 3) or equivalent wine education/experience
- Previous Food and Beverage Leadership experience.
- Displays high initiative and requires minimal supervision and direction.
- Ability to maintain high service levels under pressure
