Job Description
The Senior Director, Food & Beverage - Premium Brands is a strategic leader responsible for defining, developing, and executing the global F&B vision across Accor's Premium Brand Segment (nine brands). This role bridges branding, strategy, and execution, ensuring that F&B offerings align with each brand's positioning while driving innovation, guest satisfaction, and commercial success.
Working closely with VP Brand Leaders, regional F&B teams, Operations, Development, and DT&S, the Senior Director will translate brand positioning into compelling, scalable F&B strategies that enhance the guest experience and support business objectives. This role requires a deep understanding of the global F&B landscape, operational expertise, and a passion for creating exceptional culinary and beverage experiences.
Brand Strategy & Positioning for F&B
- F&B Vision & Identity: Develop a clear and differentiated F&B strategy for each Premium brand, ensuring alignment with overall brand positioning and target guest profiles.
- Consumer & Market Insights: Analyze trends, consumer behavior, and competitive landscapes to inform brand-specific F&B strategies.
- Concept Development: Work with VP Brand Leaders and Design teams to craft unique F&B concepts, including signature restaurants, bar experiences, and in-room dining, that elevate brand storytelling and differentiation.
- Menu & Beverage Curation: Define brand-specific culinary narratives, collaborating with chefs, mixologists, and suppliers to create signature offerings that enhance guest experiences.
Strategy Execution & Implementation
- Collaboration with Regional Teams: Partner with regional F&B leaders to implement and execute brand-specific F&B strategies, ensuring global consistency while allowing for local adaptation.
- Operational Excellence: Develop guidelines, playbooks, and best practices for F&B execution, ensuring high-quality and financially sustainable operations across all properties.
- Signature Experiences & Partnerships: Identify and execute strategic partnerships with culinary innovators, beverage brands, and lifestyle collaborators to enhance F&B experiences.
- Guest-Centric Innovation: Drive innovation in dining formats, service models, sustainability practices, and technology integration to enhance efficiency and guest engagement.
Performance & Business Impact
- Financial Oversight: Establish KPIs for F&B performance, monitoring revenue growth, profitability, guest satisfaction, and brand alignment.
- Owner & Stakeholder Engagement: Work closely with ownership groups and hotel teams to secure investments in F&B upgrades and new concepts.
- Sustainability & Wellness: Integrate sustainability initiatives, local sourcing, and wellness trends into F&B strategies to align with guest expectations and brand commitments.
- Training & Development: Collaborate with Learning & Culture teams to create training programs that empower hotel teams to deliver exceptional F&B experiences.
Cross-Functional Leadership & Communication
- Brand & Design Integration: Ensure F&B concepts align with hotel design and brand storytelling, working closely with Architecture, Design, and Development teams.
- Marketing & Digital: Partner with Brand Marketing teams to develop F&B campaigns, digital content, and social media strategies that enhance visibility and guest engagement.
- Internal Advocacy: Serve as the global F&B champion, articulating strategy, goals, and best practices across Accor's Premium Brands leadership and hotel teams.
Qualifications
- F&B Expertise: 12+ years of experience in food & beverage leadership roles, preferably within global hospitality, restaurant groups, or luxury/premium brands.
- Strategic Thinking: proven ability to develop and implement F&B strategies that align with brand positioning and deliver business impact.
- Operational Knowledge: strong understanding of hotel and restaurant operations, P&L management, concept development, and guest experience enhancement.
- Branding & Innovation: experience in translating brand identity into compelling F&B experiences, from conceptualization to execution.
- Global Perspective: experience working across diverse markets with an understanding of regional dining trends, cultural nuances, and consumer behaviors.
