Job Description
We are seeking an innovative and experienced Director of Culinary to join our team in Miri, Malaysia. As the culinary leader of our organization, you will oversee all aspects of our food and beverage operations, ensuring exceptional dining experiences for our guests while maintaining the highest standards of quality and efficiency.
- Develop and implement innovative menus and recipes that reflect current culinary trends and cater to diverse customer preferences
- Oversee all culinary operations, including kitchen staff management, food preparation, and quality control
- Collaborate with the General Manager to set and achieve departmental objectives and key performance indicators
- Ensure compliance with food safety regulations, including HACCP principles, and manage food waste effectively
- Lead and mentor a team of culinary professionals, fostering a positive and collaborative work environment
- Manage food sourcing, inventory control, and vendor relationships to optimize costs and maintain quality standards
- Implement and maintain kitchen policies and procedures to ensure efficient and effective operations
- Collaborate with other departments to enhance the overall dining experience and contribute to the organization's success
- Stay updated on industry trends and best practices, continuously improving culinary offerings and processes
- Handle customer feedback and resolve any issues promptly and professionally
- Prepare and present reports on culinary operations, including financial performance and quality metrics
- Plan and execute special events and catering services, showcasing culinary excellence and creativity
Qualifications
- 10+ years of operational management experience in culinary operations, with 2-5 years as a Director of Culinary or similar role in a 5-star property
- Culinary degree or equivalent from a recognized institution
- Proven track record of developing and implementing innovative menus and recipes
- Strong leadership and interpersonal skills, with the ability to manage and mentor a large team
- In-depth knowledge of HACCP principles and experience in managing food waste effectively
- Excellent communication skills in English, both verbal and written
- Proficiency in culinary software and inventory management systems
- Food safety certification from a recognized authority
- Demonstrated ability to manage budgets, control costs, and optimize financial performance
- Experience in menu engineering and food cost analysis
- Strong problem-solving skills and ability to make decisions in a fast-paced environment
- Flexibility to work in a dynamic hospitality environment, including evenings, weekends, and holidays as required
