Job Description
Duties include:
- Directs all aspects of the Food and Beverage Operations and ensures compliance to the Fairmont Hotel Standards in maintaining brand integrity.
- Manages and directs Food and Beverage Management team, provides support and direction to the F&B Operations in helping drive revenues.
- Assist in the preparation, presentation and subsequent achievement of the hotel's annual Operating Budget, Marketing & Sales Plan and Capital Budget. Control payroll costs, create revenue generating
- Ensure that monthly financial outlooks for Food & Beverage are on time, on target and accurate.
- Works with the Executive Chef in overseeing menu design, purchasing, staffing and food prep in all Restaurant outlets.
- Drive innovative promotions, menus and concepts; creating a destination of choice for both Hotel and external guests.
- Direct and oversee recruitment and development of employees; hire, train, empower, coach and counsel, performance and salary reviews, resolving conflict through fair treatment policy.
- Works very closely with the Sales& Marketing Department to ensure correct and adequate PR interest is being generated by driving innovative promotions, menus and concepts; creating a destination of choice for both Hotel and external guests.
- Helps to manage wages, productivity and expenses in accordance with business demand.
- Implement and manage all company programs to ensure compliance with the SOP's and LSOP's; to include safety and sanitary regulation, all federal, state (OSHA and Health Department) and local regulations to ensure optimal levels of quality service and hospitality are provided to the guest.
- Reviews staffing levels to ensure that guest service, operational needs and financial objectives are met.
- Responsible for training managers and staff in safety procedures and supervise their ability to follow loss prevention policies to prevent accidents and control costs.
- Responsible for keeping abreast of food & beverage trends with a goal to keep all products relevant and in demand.
- Develop and maintain strong relationships with guests, colleagues, and stakeholders to ensure a high level of engagement and satisfaction.
- Oversee the implementation of sustainability initiatives within Food & Beverage, aligning with Fairmont's environmental goals.
- Ensure seamless collaboration of following departments: Culinary, Stewarding, and Events, to deliver cohesive guest experiences.
- Monitor and analyze guest feedback on all TrustYou and other platforms, implementing service improvements based on trends and insights.
- Lead by example, cultivating a culture of accountability, innovation, and growth among the Food & Beverage team.
Qualifications
- University/College degree in a related discipline required
- Experience working as Director of Operations required
- Five (5) years' Food & Beverage experience in a senior leadership role required
- Computer literate in Microsoft Window applications required
- Financial Background: Comprehends budgets, operating statements and payroll progress reports as needed to assist in the financial management of department.
