Fairmont Palliser’s Hawthorn Dining Room Debuts a New Culinary Team and Menu for Summer 2022
CALGARY, 4 July, 2022 – Fairmont Palliser’s Hawthorn Dining Room & Bar (Hawthorn) has announced a new culinary team and refreshed menus to show travelers and Calgarians a true taste of the prairies this summer. The two new chefs, Executive Chef Gregor Dunki and Hawthorn Chef Daniel Mracka, bring over 30 years of hospitality experience from North America to Europe and developed the menus based on the province’s abundance of local products and of course, Alberta’s renowned beef. The refreshed menus launch this week and are available until the end of August.
“The new Hawthorn dinner menu is like a love letter to our province” says Fairmont Palliser Executive Chef, Gregor Dunki. “As both Chef Mracka and I are relatively new to Alberta we wanted our first menu at Hawthorn to be a representation of what travelers rave about when they indulge in the cuisine when they visit Alberta.”
The dinner menu features several Alberta beef options including beef tenderloin, various steak cuts and beef tartare. It also features bison, an item that although may be popular on Alberta menus, makes the province’s culinary scene stand out to international travelers. For those looking for vegetarian and vegan options, Chef Mracka and Chef Dunki have included several vegetable-based main dishes to satisfy guests dietary preferences.
Together the chefs have updated the Hawthorn bar menu with smaller sharing plates and lighter fare without skipping out on any of the exquisite flavor profiles that Alberta is known for. One thing that the pair knew they couldn’t replace is the extremely popular—and Instagram famous—Mille Crepe Cake. Each season will see a new flavor of the crowd-favorite, kicking off the summer menu with a pineapple upside down crepe cake!
To pair with the new menus, Hawthorn has brought back DJ Fridays and live music nights featuring local musicians from the Calgary area on the newly installed Hawthorn stage. For July, guests can enjoy live music every night and daily specials over the ten days of the Calgary Stampede.
Throughout the year the chefs will be offering specialty pairing dinners that highlight various wines and spirits or unique dishes that cannot be found on the menu.
