Discover how the Convotherm mini, our fully-fledged compact combi oven, can help you to operate your deli or bistro, to efficiently meet the demands of your customers, from morning snacks through to freshly prepared lunches or food-to-go.
Meet the easy-to-operate mini 6.10 in black – ideal for the front counter. And the 6.06 in classic stainless steel, idea for the back of the kitchen. Space is tight in coffee shops - both ovens measure just 51.5cm or 20” wide, yet are flexible enough to meet all your needs, and can be used in both manual and automatic cooking modes.
Our chef duo, Paul Patel and Andy Rabenseifner, explain the flexibility of this compact combi oven, and how it provides a platform for every type of cooking – steam, roast, grill and fry, allowing you to save even more space in your kitchen, by replacing other appliances.
As you will see, the mini can be put to work before the busy day in the deli or bistro even begins. The overnight cooking function is ideal for pre-production work, preparing food for building up snacks that can be sold throughout the day, and freeing up the oven and staff so that they can focus on serving customers.
Watch as we demonstrate Low Temperature cooking, which can be used in steam, combi or convection mode, to make pulled pork for use in sandwiches.
We use the core temperature probe to slow cook pork neck, resulting in high taste but low shrinkage, to give you greater yield. The core temperature is automatically selected but at the touch of a button, you can change it, depending on how well-done you want your product: Rare, medium or well done.
A typical day in the deli or bistro often starts with baked products, whether pastries to accompany your drinks offer, or bread to build your sandwiches and snacks. We show you our specialist program: BakePro. This manual cooking feature reduces the time for thawing pre-prepared products from 30 minutes to just 3.5 minutes in the oven, using a two-stage process based on high humidity, to give you even color, perfect shine and crustiness.
When cooking manually, let us show you how TrayView and TrayTimer help you to control and monitor mixed loads, with a countdown and alarm for each shelf.
Next up, we show how to create perfect snacks using combi steam: Crisp but fluffy muffins and beautifully moist quiches with the perfect crust. Part of our Climate Management system, the mix of pure steam and convection air helps to automatically create the perfect climate to ensure every product retains the right level of moisture.
Lunch in the bistro is a peak busy time and the focus must be on serving customers. We now switch to automatic cooking, Press&Go: at the touch of a button, even unskilled staff can select from the preset icons to quickly select the right program for cooking simple snacks or foods that can be built into more elaborate menu options.
The items can be quickly cooked-to-order to serve waiting guests - our chefs demonstrate with a salmon salad with pomegranite seeds – or packaged up for delivery as part of your food-to-go offer.
Using just one accessory, our chefs show how the preheated Grill Tray can be used to cook salmon, chicken and vegetables to perfection; the dripping tray keeps the oven clean while the grill creates the perfect charring effect for more intense textures and flavours. We explain how our Crisp&Tasty feature is used to retain flavour and increase crispiness.
With an eye on hygiene and cleanliness, you will see that the mini hood removes grease and smoke throughout the day. Finally, we explain ConvoClean - one touch cleaning that is used at the end of a busy day. In a small bistro kitchen, you will appreciate the drawers that neatly stack beneath the unit to hold and automatically dispense the cleaning chemicals. Simply select the cleaning level (you can even create a favorite profile).
Of course, your front-of-counter oven is always on display to customers so you will find the two extra programs - boost and shine particularly useful.
