United Arab Emirates, Dubai, 27, 2023: Kempinski Hotel & Residences Palm Jumeirah announces the promotion of Chef Andrea Kosarew to the position of Chef de Cuisine following two years of exemplary service at the hotel.
Joining Kempinski Hotel & Residences Palm Jumeirah in December 2021 as a sous chef, Chef Andrea swiftly became instrumental in curating delectable dishes marked by unparalleled culinary finesse and a commitment to uncompromising quality. Notably, his recent masterpiece—the 7-course degustation menu at Brunello—stands as a testament to his culinary prowess and celebrates Italy’s vibrant flavours and culinary artistry. Additionally, his contribution to a newly launched takeaway menu earlier this year extended Brunello’s exquisite dining experience to guests’ homes through a delivery option.
Chef Andrea’s journey, steeped in an unwavering passion for food and culinary exploration, spans a decade across renowned properties. Holding a postgraduate degree in Culinary Arts from George Brown College, Toronto, his global tenure includes pivotal roles in Canada and the UK before his position at Kempinski Hotel & Residences Palm Jumeirah as sous chef in December 2021. Among his diverse roles, he served as chef de partie at Villa Mamas London in 2017, immersing himself in Middle Eastern culture and cuisine. Later, as sous chef at Rabbit Restaurant in London, he championed a farm-to-table dining experience before venturing to Abu Dhabi’s Salama’s Restaurant as head chef, overseeing menu development, costing, and private dining services.

As Chef de Cuisine, Andrea spearheads operations at Brunello restaurant, managing a 16-chef brigade while orchestrating menu engineering, recipe development, and cost management. His responsibilities encompass overseeing daily operations, ensuring HACCP-compliant food production. Furthermore, he is committed to fostering team training and individual growth for his team members.
Chef Andrea’s team from Kempinski Hotel & Residences Palm Jumeirah emerged as one of four selected from ten teams in the regional final competition at YouthX Chef Challenge. Reflecting on his experience, he shared: “Engaging in this competition shifted our focus to a broader perspective. For instance, we focus on sourcing our ingredients from a single supplier to reduce our footprint by minimising emissions through transportation from multiple suppliers. It's imperative to contribute to a sustainable future. As I transition into the role of Chef de Cuisine, it's vital to champion education on these practices, and I aim to inspire upcoming chefs to advocate for sustainability”.
