Stuart Sage Recognized in Hozpitality’s Best 30 Powerlist of Chefs in the Middle East 2025

Stuart Sage, the accomplished Executive Chef at Waldorf Astoria Dubai Palm Jumeirah, has been recognized in Hozpitality’s Best 30 Powerlist of Chefs in the Middle East for 2025. With over 25 years of culinary experience, Chef Stuart has built an impressive fine dining and luxury hospitality career spanning the UK, Europe, and the UAE.
Chef Stuart’s journey began with a Culinary Diploma from Barnfield College, UK, in 1997. His career took off with a Sous Chef role at Michelin-starred Rain Restaurant in Amsterdam in 2005. In 2007, he moved to Dubai, where he led Tang at Le Meridien Mina Seyahi, earning it a spot among the top five in the San Pellegrino 50 Best Restaurant Awards for the Middle East.
His innovative approach continued as Research & Development Head Chef at Le Meridien Dubai, where he pioneered molecular gastronomy training. Chef Stuart later served as Executive Chef at The Address Montgomerie, launching the acclaimed "Battle of The Chefs" competition, and at Atmosphere in Burj Khalifa, crafting its European-inspired seasonal menu.
In 2017, Chef Stuart managed Pine Cliffs Resort in Portugal, overseeing 10 restaurants and a team of 250 chefs. After consulting for two years in the UAE, he led the culinary launch of ERTH Resort in Abu Dhabi before joining Waldorf Astoria Dubai Palm Jumeirah in 2022.
