Following donations of chocolates to front line staff in Paris, London and Brussles, world-renowned chocolatier, Pierre Marcolini, shares some of his most popular recipes so you are able to replicate at home, with or without your kids!
Whip up his Flourless Chocolate Cake or Crème Brûlée using the tutorials and recipe guides below.
Pierre Marcolini’s Flourless Chocolate Cake

Serving: 4 people
Preparation Time: 20 minutes
Bake Time: 180 degrees Celsius for 20-25 minutes
Ingredients:
- 4 egg yolks
- 40 g powdered sugar
- 6 egg whites
- 50 g dark chocolate 70%
- 10 g butter
Pierre Marcolini’s Crème Brûlée

Serving: 4 people
Preparation Time: 25 minutes
Bake Time: 120 degrees Celsius in the oven for 20 minutes. If it’s still wobbly, put it back in for 10 to 15 minutes more until firm
Ingredients:
- 30 g powdered sugar
- 70 g dark chocolate 70%
- 140 ml florerette cream
- 140 ml milk
- 4 egg yolks
Pierre Marcolini’s Madeleines

Preparation Time: 20 minutes
Bake Time: 180 degrees Celsius for 10-15 minutes
Ingredients:
- 80 g soft butter
- 10 egg yolks
- 1 whole egg
- 70 g powdered sugar
- 1 vanilla pod
- 60 g sifted flour
- 10 g cocoa powder
- 1 pinch salt
- 1 pinch baking powder (2g)
- 1 orange zest + 1 lemon zest.
