Chef Kjell Kollin brings over 33 years of kitchen experience.
Swedish national Chef Kjell Kollin has garnered over 33 years of kitchen experience and rest assured his culinary journey has been an exhilarating one. He has taken the helm as Executive Chef at an incredible array of five-star hotels around the world, with his focus now firmly on Dubai's iconic five-star property- Park Hyatt Dubai and Dubai Creek Golfand Yacht Club. Here he will be responsible for a brigade of over 100, across 14 of the resort's FB including NOEPE, Brasserie Du Park, the infamous Traiteur Brunch, Thai Kitchen, Boardwalk, QD, Cielo, Casa de Tapas and Lakeview.
Kollin started his career - 83 working as an apprentice, progressing to Commis de Cuisine in Stockholm's Michelin starred Operakällaren, Tore Wretman Restaurant, moving to Europe to work before moving to Kuala Lumpur where he spent 7 years and 4 of them working his way up to Chef de Cuisine in the Regent Four Seasons Hotel.
This marks the beginning of his career, perfecting his craft in countries, such as Japan, China, South Korea, Azerbaijan, The Maldives, Bahrain and the UAE. It is therefore unsurprising that this well- travelled chef has been become an expert in a diverse array of cuisines. Additionally, Kollin speaks Japanese, German and English, as well as his mother tongue- Swedish.
Before taking hold of the Park Hyatt Dubai's culinary reins, Kollin was Executive Head Chef at Bejing's Azur Restaurant by Mauro Colagreco. Previously he has held the position of Executive Chef at an impressive number of five-star hotels including:

Kollin is a chef that can talk at length at the origins of the food that he serves, and he is passionate about delivering a stellar dining experience to every one of Park Hyatt's guests. Kollin takes a hands-on approach to his work- when he is not in the kitchen, he can be seen riding around the resort on his scooter, working in the various FB outlets, ensuring guests are enjoying the Park Hyatt Dubai experience, to which they have become accustomed.
