‘Venti dei migliori’ as Trattoria Toscana introduces 20 new dishes
to its authentic Italian menu
Trattoria Toscana, the waterfront Italian dining destination in Souk Madinat Jumeirah, has doubled down on its authentic Italian roots with 20 delectable new dishes inspired by culinary staples from its Mediterranean homeland.
Renowned for offering the most authentic Italian dining experience in the city, inspiration stems from every corner of Italy, with the 20 new dishes comprising classic Italian favourites made with only the most premium ingredients – more than 70 per cent of which are imported directly from Italy – and complemented by fresh pasta produced in-house, according to Head Chef Antonio Iacovelli.
In another coup for Trattoria Toscana’s chefs, the restaurant has also recently introduced a brand-new pizza oven to the kitchen, handmade in Italy and the perfect size to churn out top quality pizzas in record time, without compromising quality.
“It’s important for us to bring the best Italian ingredients to Dubai and also continue our long tradition of making Trattoria’s diverse array of fresh pastas right here in Dubai,” said Chef Iacovelli, who hand-picked his favourite new dishes to be introduced to the Trattoria Toscana kitchen.
The star of the starters is the Burrata, Datterino, Olio Antica Muraglia, Perle di Balsamico al Tartufo, which hails from Chef Iacovelli’s home town of Puglia and is made in collaboration with the cheese masters at Dubai-based Italian Dairy. Created with 100 per cent Italian milk, the authentic burrata comes served with Datterino tomatoes and classic balsamic pearls infused with truffle. Perfect for sharing, the La Panzanella Toscana salad served with Tropea onions, cucumber, bread and basil is a popular Italian staple, while the smoky Carpaccio di Manzo – beef carpaccio served with pickled mushrooms, smoked oil and toasted pine seeds – and the elegant Fresh Tartare di Tonno – fresh tuna tartare with avocado cream, green apple mayo and pickled onion – will also get your meal off to a fine start.
When it comes to the main courses, Trattoria chefs are extremely excited about the Capunti Pugliesi con Alici, Peperoni Arrosto, Pan Tostato (Capunti pasta with roasted red capsicum, marinated anchovy and toasted bread) - a traditional favourite of Italian grandmothers. An extremely rare and unique cut of pasta, the Capunti Pugliesi comes with marinated anchovy and capsicum sauce and served with crumbled toasted bread – which was traditionally used to replicate parmesan cheese. Also of note is the Risotto alla Milanese – a smooth yet deliciously rich Saffron Risotto served in a creamy parmesan sauce - while the Trancio di Branzino, or seabass steak, comes served with fennel puree, warm citrus and ginger dressing for a light lunchtime option that’s delicate on the senses.
Meat lovers, fear not – the La Mia Bistecca alla Rossini is new to the menu; a dish originally created by famed Italian composer Gioacchino Rossini. Trattoria’s reinterpretation replaces the traditional cut of tenderloin with a juicy rib-eye and comes served with a foie gras terrine and seasonal fresh black truffles.
All of Trattoria Toscana’s classic desserts can still be found on the menu, including the centuries-old Baba al Rum Analcolico – a much-loved Neapolitan street food treat of soft sponge cake dipped in syrup with water, sugar, orange zest and a rum aroma, served with custard cream and caramelized cocoa nibs. There’s also the Chocolate Lava Cake served with hazelnut ice-cream and salty caramel sauce, Tiramisu served with mascarpone cream, coffee-soaked lady fingers and cocoa powder, and Coconut Panna Cotta to satisfy each and every sweet tooth.
