Emanuele Di Tullio, the accomplished Cluster Executive Chef at Novotel Dubai Al Barsha and Adagio Premium Dubai Al Barsha has been recognized in Hozpitality’s Best 30 Powerlist of Chefs in the Middle East for 2025. With over 15 years of experience, Chef Emanuele has established himself as a culinary leader, blending technical expertise with a commitment to sustainability and innovation.
Chef Emanuele’s culinary journey began at the Professional Hotel Institute Michelangelo Buonarroti in Fiuggi, Italy, and continued at the Intermediate School of Lariano in Rome. His career has been marked by a dedication to excellence and a passion for creating memorable dining experiences. Since November 2021, he has led culinary operations across three hotels, overseeing 1,100 rooms, 8 outlets, and 10 meeting spaces, ensuring the highest standards of quality and service.
Under Chef Emanuele’s leadership, Novotel Dubai Al Barsha and Adagio Premium Dubai Al Barsha have implemented several sustainable initiatives. These include offering healthier, eco-friendly products such as sugar substitutes and non-dairy milk options, expanding vegan and plant-based menus, and sourcing locally grown ingredients to reduce carbon footprints. The hotel cluster also partners with the Zayed Higher Organisation for People of Determination to support local businesses and communities.
Chef Emanuele has introduced hydroponic farming solutions in collaboration with Smart Grow Farm and Fresh on Table, significantly reducing water usage and increasing crop yields.
Additionally, the property uses sustainable frying oil and the Winnow System, an AI tool that monitors food waste, to promote sustainable practices and reduce kitchen waste. During Ramadan, the hotel collected used date pits and returned them to farmers for composting, further supporting sustainable agriculture.
Chef Emanuele’s efforts have enhanced the culinary offerings at Novotel Dubai Al Barsha and Adagio Premium Dubai Al Barsha while setting a benchmark for sustainability in the hospitality industry. His visionary leadership and commitment to excellence make him a deserving candidate for recognition.
