Chef Johnathan Benvenuti's Fresh Dishes Pay Homage to His Hometown, Huntington Beach
Paséa Hotel & Spa announces new chef de cuisine, with a new elevated menu at signature restaurant Tanner's
Huntington Beach, CA (October 17, 2022) Paséa Hotel & Spa – a Meritage Collection hotel set in the heart of Huntington Beach’s vibrant coastal community – welcome Johnathan Benvenuti as Chef De Cuisine. With his arrival comes newly elevated menus at Paséa’s signature restaurant Tanner’s. Working hand-in-hand with Executive Chef James (JJ) Burton, Chef Benvenuti continues to carve the hotel’s place as one of Orange County’s most coveted culinary destinations.
Born and raised in Huntington Beach, Chef Benvenuti comes to Paséa mostly recently from Orange County restaurant Broadway by Amar Santana, with prior experience as Sous Chef at Water Grill and The Capital Grille. Inspired by his love for the city, Benvenuti’s dishes emphasize California’s fun and creative flavors, while tapping into his own hometown experience.
Under the helm of Chef Benvenuti, Tanner’s new dinner menu harkens back to the restaurant's California coastal roots, with a larger focus on seafood and elegant cuts of meat. Menu standouts include a shareable spin on crab cakes served with sweet potato & aji Amarillo purée, a 32 oz Prime Tomahawk with porcini rub, Charred Octopus, Herb-Crusted Campbell River Salmon, Branzino Escabeche, and more. Chef Benvenuti’s menu also spotlights a few of his family classics that have been passed down for generations, including the Double Bone Pork Chops. Sweetening the experience, the new dessert menu features items such as the heavenly Brown Butter Banana Cake, Cast Iron Apple Crumble, Crème Brûlée Cheesecake, and more.
