Caesars Bluewaters Dubai Teams Ups with Michelin-Star Chef Akira Back on Modern Japanese Restaurant Paru

Dubai, May 2019: Introducing a second Michelin-star chef into the culinary mix, Caesars Bluewaters Dubai opens modern Japanese restaurant Paru in partnership with award-winning Michelin-star Chef Akira Back (Sung Ook Back). Located on a stunning rooftop at Caesars Resort Bluewaters Dubai, with breathtaking views across two spectacular terraces, the new eatery offers an eclectic menu of modern Japanese dishes masterfully created by Back. The perfect spot to watch the sun set across the Arabian Gulf, Paru offers guests something unique – a buzzing bar, chilled out lounge and modern restaurant, all in one slickly-designed space.
Divided into three distinct areas, the journey into Paru starts with the impressive light-filled dining room. An intricate ceiling of stark white origami flowers lit with turquoise blue pays homage to the restaurant’s Japanese roots and mirrors ocean views seen from its towering glass wall. Suspended from the ceiling, a flowing steel and crystal sculpture with strings of luminous orbs nods to the restaurant’s name, meaning ‘pearl’ in Japanese.
Framing the bar and sushi counter, a modern mural – alluding to art as a form of love – was designed by Akira Back’s artist mother, adding a dramatic focal point for those perched beneath it. Guests can watch chefs at work while indulging in a selection of delicacies from the menu or finding comfort in a more chilled out meal in lounge seating located by the floor-to-ceiling windows. For those that want to dine ‘Japanese-style’, a tall central long table creates the perfect opportunity to people-watch or keep tracks on Paru’s Resident DJ.
Outside, Paru offers guests the choice of two alfresco terraces, both designed for dining and the quintessential sundowner experience. Flanked by bonsai trees, the dining terrace creates the ideal chance to tuck into the modern Japanese menu while taking in JBR’s epic skyline. On the other side, the lounge terrace with cushioned wicker sofas and low tables is a more chilled affair, serving shisha every evening. Set to top every list of “spots to catch the sunset” it boasts sweeping views of the glittering Arabian Gulf, city skyscrapers and curving fronds of Palm Jumeirah.
Created by Chef Akira Back, Paru’s eclectic menu reflects the culinary landscape of modern Japan. Having trained in Japan for many years, Back is known for bringing a sense of adventure to his culinary creations, taking traditional flavours and techniques from the region and giving them his own signature twist.
Born in Korea and raised in Aspen, Colorado, Chef Akira Back brings a sense of adventure and creativity to his culinary creations. A former professional snowboarder turned Michelin Chef, Akira Back is at the helm of several award-winning restaurants around the world including one Michelin-starred DOSA in Seoul, Korea. Having built strong partnerships across the world, Akira Back has led his team to successful ventures while creating innovative venues and a global brand. He continues to expand his global portfolio with 15 restaurants currently in operation and an additional twelve set to launch by 2020. Designed to deliver a sense of adventure in every bite, dishes include ‘Cool Share Plates’ such as Suzuki Ceviche (sea bass with caviar and soy yuzu ponzu) and Crispy Rice (spicy tuna on crispy rice, avocado, jalapeno, spring onion) as well as ‘Warm Share Plates’ including Hotate (scallop, baby eggplant, enoki mushroom, asparagus and truffle soy butter) and Popcorn Ebi (rock shrimp tempura, mango aioli).
Also designed-to-be-shared, a selection of marinated and flame-grilled seafood and vegetable skewers will transport guests to the streets of Tokyo – and provide the perfect partner to an expertly blended cocktail. Other menu highlights include a Black Pepper Wagyu Ribeye (mushroom, onion, black pepper) and Teriyaki Jidori Chicken (green beans, kuri kimchee, maple soy) as well as ‘Signature Rolls’ such as Paru House (tuna, salmon, scallops, shrimp tempura, yuzu miso) and Harmony (foie gras, wagyu beef, lobster tempura, truffle sauce). Best sampled at the intimate sushi counter, a selection of traditional sushi, sashimi and temaki – created by the sushi master – is also on offer.
With the glorious city backdrop and ever-pumping beats from the Resident DJ taking guests into the weekend, plus a dedicated music concierge, Paru offers an experience that is as sumptuous as it is uplifting. Creating the perfect fuel for balmy nights and long dinners, the drinks menu includes a range of cocktails and cleansers. Expertly blended with Asian flavours, highlights include ‘Paru Signatures’ such as Paru Paru and Sparkling Japanese Sangria, plus Akai Kisu and Detonika cleansers – and a grand selection of sake and wine.
Launching in June, Paru will introduce Maiko Night, taking ladies night to new heights. Taking place every Wednesday from 7pm – 11pm, ladies will enjoy four complimentary drinks and 25% discount on dining, while the live DJ spins tunes for the crowd.

About Akira Back
Better known as Akira Back, (Sung Ook Back) is a Korean native and former professional snowboarder who was raised in Aspen, Colorado. Having studied at the International Culinary School at The Art Institute in Colorado, Chef Back’s career has included travelling across the US and Japan training under celebrity chefs.
