Executive Chef Marque Collins leads Surety Hotel’s Mulberry Street Tavern, while Executive Chef Garrison Price is at the Helm of Daxton Hotel’s Madam Restaurant
CHICAGO, IL November 5, 2020 Aparium Hotel Group announces the executive chef appointments for two of its upcoming properties. Set to lead robust and locally-inspired culinary programs at their respective hotels, Marque Collins serves as executive chef forSurety Hotel-- which opens in Des Moines on November 11, 2020 -- while Garrison Price is executive chef atDaxton Hotel, debuting February 2021 in Birmingham, Michigan.
Prior to the pandemic, Aparium's food and beverage offerings generated more than over 40% of the hotel group's topline revenue. With an ambitious pipeline of six openings over the next two years -- arguably the boldest vision for any independent brand at the most challenging time in the history of hospitality -- Executive Chefs Collins and Price will play a key role in the brand's growth.

As executive chef, culinary visionary Marque Collins spearheads the food and beverage program forSurety Hotel,debuting this month in Des Moines burgeoning downtown district. Worldly takes on traditional tavern fare at the property's signature restaurant,Mulberry Street Tavern. With an open-hearth kitchen, the menu comprises meat-forward dishes showcasing the flavor of the wood grill. A self-taught chef with more than ten years of experience, Collins worked across Chicagos Boka Restaurant Group's portfolio of restaurants alongside Jean Banchet Award-winning chef Chris Pandel, most recently serving as chef de cuisine at the former Wrigleyville Dutch Doc's and executive sous chef of premier steakhouse Swift Sons.

Garrison Price
Renowned chef Garrison Price serves as executive chef forDaxton Hotel, which will stand as the most luxurious property in Apariums portfolio. Price will oversee the hotels fine dining restaurant,Madam, featuring enlightened American fare with an ever-evolving menu focusing on seasonality and the freshness emblematic of California cuisine. Price has more than 20 years of culinary experience, most recently as the executive chef and culinary director of New York City's Il Fiorista. He also served as executive chef for three years at Manhattan's iconic il Buco Alimentari e Vineria and culinary director for Jean-Georges Vongerichten, overseeing 17 of his acclaimed restaurants around the globe.
