Gates Hospitality Sets New Standard for Sustainability in Dubai’s Hospitality Industry
Gates Hospitality is signing an exclusive agreement with BUSTANICA for sourcing leaves and herbs across all venues
Dubai, 19 July 2023 - Homegrown hospitality company Gates Hospitality announced that it has elevated its venues in line with its enhanced commitment towards sustainability in the F&B industry. The company has taken decisive steps to reduce single-use plastics, implement eco-friendly practices, and promote a sustainable supply chain throughout its operations. From single used plastics to filtered water in reusable glass water bottles to reduce the waste produced from single-use plastics.
Additionally, Gates Hospitality has embraced various sustainable measures, including converting recycled kitchen oil into biofuels, sourcing organic ingredients from a sustainable supply chain, and implementing waste segregation practices. The kitchen and bar teams actively categorize waste into food, glass, metals, paper, and cardboard, meticulously tracking and weighing them to explore innovative waste reduction and repurposing solutions.
Gates Hospitality has also carved a special responsibility towards this initiative by collaborating with local suppliers, sourcing all products from local farms and growers wherever possible depending on availability and seasonality. This strategic collaboration considerably reduces transportation-related externalities while also benefiting the local economy.
Another major step in this direction is reflected in Gates Hospitality signing an exclusive agreement with Dubai-based world’s largest vertical farm BUSTANICA to be its preferred supplier for sourcing leaves and herbs across all its restaurants. Because of its novel year-round ideal growing environment, BUSTANICA's nutritious food reduces the UAE's dependency on imported fresh produce and reduces water use by an impressive 95%.

In August of last year, Gates Hospitality showcased its commitment to sustainability through the establishment of a vegetable garden spearheaded by Yugal Kishor, the Head Chef of Reform Social & Grill. The garden was constructed using upcycled materials such as old scaffolding boards and reclaimed timber. With four trugs divided into different sections for growing various vegetables, the garden employs composting techniques to repurpose food waste, reducing overall waste production. The freshly grown vegetables are incorporated daily into select menu items, including salads, offering guests a truly farm-to-table experience.
